FLYING FISH ROE
Flying fish roe is a specialty dish, hard to find because fish eggs are only available in season. The plate of golden caviar, always accompanied by a bowl of spicy and sour dipping sauce and a plate of raw cilantro, can captivate even the most fastidious tastes. After the crackling, crunchy sound of the caviar breaking, the sweet, fleshy, greasy taste blends with the sour and spicy taste of the dipping sauce that slowly seeps into the tip of the tongue, giving diners an indescribable feeling.
